Edi Kante is one such individual—a relentless and passionate winemaker who has dedicated his life to the vines and the land itself, forming an inseparable bond between the two.
Kante’s long journey has led him to live in close harmony with the Karst, becoming a proud ambassador for the region’s unique characteristics. Each day, he faces the ongoing challenge of selecting the most suitable vines that can withstand the fierce Bora wind from Trieste and thrive on the meager nutrients provided by the arid limestone and iron-rich red soil. It is no wonder that native grape varieties have become the flagship of this territory.
With this philosophy, Kante built his cellar in 1980, integrating it perfectly into the Karst landscape. Kante’s winery was carved directly into an existing cave and designed on several levels. The stone chambers provide the ideal environment for vinification and aging, naturally maintaining stable humidity and temperature, which are crucial to the exceptional quality of the wines produced here.
The wines that emerge under Edi’s careful guidance reflect the natural character of the land, marked by a distinct salinity, minerality, and refreshing acidity. This is most apparent in the Chardonnay ‘La Bora’. After 12 months of fermentation and aging in used barriques, La Bora is bottled without filtration and then aged for at least another three years. The result is a charismatic wine with fresh, delicate, herbaceous notes that beautifully blend with the classic buttery character of Chardonnay. Its structure is savory, golden, and lingers on the palate, leaving a memorable impression.
The 2018 line of sulfite-free wines is particularly noteworthy. These bottles represent twenty years of dedication to achieving the clean, pure taste that is the hallmark of Edi Kante’s philosophy, achieved through meticulous grape selection, berry by berry. Kante’s wines are easily recognized by their evocative labels, which feature stalagmites and stalactites referencing the karstic cave where they originate. The range includes not only Chardonnay, but also Malvasia and Sauvignon, with the selection varying each year according to the climate.
The 2018 vintage is sealed with crown caps to prevent oxygen from affecting the aging process, while in 2019, some bottles return to cork closures in a continual search for perfection. Of special interest is the KM Malvasia 2018, vinified for just six months in steel and bottled without added sulfites. This wine captures the original fragrance and purity of its native grapes.
