Delightfully airy and bursting with flavor, this citrus tea loaf offers the perfect balance of sweetness—ideal for those moments you crave a treat that's not overpowering.

This recipe celebrates the delicate union of fresh ricotta and vibrant orange zest, creating a tender cake that can adapt beautifully to a range of seasonal citrus fruits. Should you happen upon luscious Sicilian blood oranges, their depth of flavor will elevate this cake to new heights. Even classic navel oranges bring a sun-kissed brightness that shines in every slice.

Historically, Italian home bakers have leaned on ricotta-based cakes for their moist crumb and subtle tang, making them favorites not only for dessert but also as a breakfast or afternoon snack. This tradition continues with the tea loaf, a modern twist on classic flavors.

Versatile and wholesome, this cake is the perfect excuse to enjoy the bounty of winter citrus. Its quick preparation and irresistible aroma will have you reaching for a second slice!

In a large mixing bowl, thoroughly blend ricotta cheese and granulated sugar until the mixture is smooth and creamy. Incorporate eggs one at a time, mixing well after each addition. Add the finely grated zest of your chosen oranges to infuse the batter with a fragrant citrus aroma. Continue mixing until all ingredients are fully integrated and the batter is light and uniform.

Bake the Tea Loaf and Garnish

Pour the prepared batter into a loaf pan lined with parchment paper for easy release. Place in a preheated oven at 320°F (160°C), and bake for approximately 20 minutes, or until the cake is lightly golden and a toothpick inserted in the center comes out clean. Allow the loaf to cool before serving. For an extra touch, accompany slices with fresh fruit, seasonal berries, or a drizzle of rich chocolate sauce.

Sounds wonderful!

Are you placing the parchment paper on top of the cake or lining the baking pan with the parchment paper? Also what size baking sheet do you use? I am so looking forward to making this!
