Assemble the Eggplant Flan

Thoroughly rinse the eggplants and slice them into uniform, thin rounds for even cooking. Dust each slice lightly with flour, then fry them in hot oil until golden and tender. Once cooked, transfer the fried slices onto absorbent paper to remove excess oil. Cut the Piave DOP Mezzano cheese into small cubes.
Carefully line individual ovenproof molds with the cooked eggplant slices, layering them to cover the sides and bottom. Distribute the cubed Piave DOP Mezzano cheese inside the molds, then seal the flan by placing another slice of eggplant on top.
Bake in a preheated oven set to 180°C (356°F) for 15 minutes, allowing the flavors to meld and the cheese to melt. For serving, plate the flans with a spoonful of tomato sauce as a base and gently unmold the flan on top for an elegant presentation.

Eggplant and Cheese heaven!

Cheese is without a doubt one of my absolute favorite things in the world! To avoid eating chunks of it straight out of the fridge, I have always looked for recipes to incorporate my daily fix of dairy, and this eggplant flan is just what I needed!
