Tart and light

Avocado is one of my go-to ingredients, and I use it wherever I can. I'd never thought of putting it together with citrus though, and since fennel isn't always an easy-to-source feature player, this salad was a new one for me. But, I LOVE IT! The flavours blend together so perfectly and play off each other with different degrees of sweet, tart, tangy, rich and smooth. It's truly perfection, and worth the extra step to find fresh fennel. Gets me through the winter, that's for sure!
