This refreshingly light and sophisticated dessert combines the creamy texture of homemade pudding with the aromatic sweetness of melon marinated in the Italian dessert wine Vin Santo. The subtle yet invigorating addition of fresh mint elevates the flavors, making this treat truly unforgettable.
Ideal for summertime gatherings or as a cooling finale to any meal, this recipe comes together quickly, with prep times kept to a minimum—most of the effort is simply waiting for the pudding to chill and the fruit to absorb the wine’s complex notes.
Embrace the flexibility of this dish: select from cantaloupe, honeydew, or any robust, in-season melon for the topping. The contrast between the pudding’s lushness and the melon’s bright, wine-kissed taste delivers a playful harmony of flavors and textures.
For a family-friendly, non-alcoholic variation, simply swap the wine for a pale fruit juice like apple juice—the result is still irresistibly delicious and suitable for guests of all ages.

Step

In a small saucepan, gently whisk together all the pudding ingredients. Set the pan over medium heat and bring the mixture just to a boil, stirring constantly to ensure a smooth consistency. For a plant-based adaptation, substitute the gelatin with agar agar.
Once the pudding thickens and is fully blended, remove from heat. Pour the mixture evenly into individual serving dishes or small bowls.
Cover each dish with plastic wrap to prevent a skin from forming. Place the puddings in the refrigerator and allow them to set for a minimum of 2 hours until thoroughly chilled and firm.

Choose your preferred variety of firm-fleshed melon—such as cantaloupe, honeydew, or another seasonal favorite. Remove the rind and cut the flesh into uniform, bite-sized cubes for even marination.
Transfer the melon cubes to a medium mixing bowl. Sprinkle with powdered sugar and pour in the aromatic Vin Santo wine. Stir gently to combine, ensuring every piece is coated.
Cover the bowl and allow the melon to macerate in the refrigerator for at least one hour. This process infuses the fruit with the wine’s rich flavor. Just before you’re ready to serve, finely chop a handful of fresh mint leaves and fold them into the marinated melon, adding a burst of fragrance and color.

When ready to serve, remove the chilled pudding cups from the refrigerator.
Spoon a generous heaping of the marinated melon and mint mixture atop each pudding. Distribute the fruit evenly for an attractive presentation.
Serve immediately while cold, and enjoy the contrast of creamy pudding, aromatic wine-infused melon, and refreshing mint in every bite.

Sweet and quick
I needed a quick dessert that I could prepare ahead of time, and this certainly delivered what I needed. Just a few minutes to whip up the pudding base and to macerate the fruit. Put it in the fridge and got everything else done while this was chilling - just what I needed and the best part was that everyone loved it! Surprisingly layered and textured taste considering the ingredients are easy to source and you actually likely already have most of them already at home!
