For the tomatoes, peel them (a brief dip in boiling water makes this process easier), remove their seeds, and blend the flesh into a smooth purée using either a blender or an immersion blender. Set the tomato purée aside.

One of my all-time favs!

Eggs are a fundamental part of my diet - such an easy ingredient to work with and make work with my specific veggie diet. A frittata is the best way to get a good meal in since its quick, healthy and nutritious too - nothing not to love here. Throw in some extra vegetables hanging about the fridge and watch the magic happen. As the recipe says, the trick is to valorise a few ingredients, and this is the best way to make those old veggie flavours pop!
