Blanch Broccolini to Preserve Texture and Color

Begin by filling a large saucepan with water and adding a generous pinch of salt. Bring the water to a rolling boil. Drop the broccolini into the pot and quickly blanch it—this step ensures the stalks remain vibrantly green and pleasingly crisp-tender. In just a couple of minutes, the broccolini should be softened but still firm to the bite.

Once blanched, drain thoroughly and let cool until safe to handle. Place the broccolini on a sturdy cutting board and chop it coarsely using a sharp knife or mezzaluna. This prep makes it easier to evenly cook and absorb the flavors in the next step.

Tip: You’ll want one full bunch of fresh broccolini (also known as broccoli rabe) for this recipe, ensuring the freshest flavor and nutrition.

Of 2

Infuse Broccolini with Sautéed Garlic and Chili

While the broccolini cools, generously coat the base of a sauté pan with high-quality extra-virgin olive oil and set over medium heat. Smash several garlic cloves, peel them, and slice in half for maximum flavor release.

Once the oil begins to shimmer, toss in the garlic halves and a pinch (or more, if you like heat) of red chili flakes. Allow the garlic to turn a light golden brown—this is when its aroma is most intense—then add the chopped broccolini. Season with salt to taste and continue to sauté, stirring regularly, until the broccolini is fully tender and suffused with garlicky, spicy notes. This should take no more than 10 minutes; if you choose to cook longer, reduce the heat to prevent burning.

Serve immediately while hot for maximum flavor and aroma, and enjoy a traditional Italian vegetable dish with a modern, healthful twist.

Spicy and nutritious

I love adding greens to my diet, and broccolini are a terrific find. If you get a bit tired of the same old spinach and other leafy greens, this is a terrific one to incorporate - the spicy chili really adds that missing depth some of the other prep methods offer.
