Begin by preheating your oven to 160°F (71°C) to ensure a gentle, even bake.

Thoroughly wash the fresh spinach leaves and remove all stems for a smoother texture. Blanch the spinach in boiling water for about 7 minutes until fully wilted and tender, which helps maintain its vibrant color and nutrients.

Drain the spinach well, and set aside to cool completely. Cooling is essential for achieving a silky, lump-free blend when you mix your ingredients.

In a large mixing bowl, combine the cooled spinach, rich cream, fresh milk, and large eggs. Use an immersion blender to create a smooth, homogenous mixture. Taste and add salt to your preference at this stage for perfect seasoning.

Baking the Flan Mixture

Generously butter your chosen molds or baking tray to prevent sticking, then dust them lightly with flour for easy release after baking.

Fill each prepared mold with the blended spinach mixture.
