One of my all-time favs!

I will never get enough of potatoes in just about any form, but make 'em mashed, and this gal just can't get her fill. Perfect for a lighter side on Thanksgiving (for instance), or to go with a quick grilled chicken, the lighter texture and calorie count make me feel like I'm eating healthy here!
