Traditionally, fresh handmade pasta has been off-limits for individuals with gluten sensitivities, including celiac disease and gluten intolerance. This restriction meant missing out on one of Italy’s most cherished culinary creations.
For those with dietary restrictions, especially within Italian families, giving up pasta was a significant challenge. However, advancements in food technology and the widespread availability of gluten-free flour blends have transformed the culinary landscape, making it possible to recreate authentic pasta experiences without gluten.

Step
1
Of 3
Place your chosen gluten-free flour blend on a clean work surface or in a large mixing bowl. Create a well in the center and crack the eggs into it. Add a pinch of salt to the eggs.
With a fork, gently beat the eggs, gradually incorporating the flour from the edges into the center. Continue until the mixture thickens and becomes challenging to mix with the fork.
Transition to kneading the dough by hand for approximately 10 minutes until a cohesive, elastic dough forms. If the dough feels too wet or sticky, incrementally add more gluten-free flour blend. If it is overly firm, integrate a small amount of warm water until the proper consistency is achieved.
Shape the dough into a smooth ball and dust the surface with additional gluten-free flour blend to prevent sticking.
Step
2
Of 3
Lightly dust your work surface with gluten-free flour. Place the dough on the surface and use a rolling pin to flatten it, working from the center outward to achieve your desired thickness (aim for a thin sheet for best texture). Alternatively, use a pasta machine for consistent results.
Once rolled out, fold the dough sheet several times, ensuring each fold is dusted with gluten-free flour to prevent sticking. Decide on your preferred pasta shape—such as fettuccine, pappardelle, or others—and cut accordingly.

This dough is adaptable for stuffed pasta varieties like ravioli or tortelli, as well as for making classic noodles including tagliatelle and maltagliati.
After shaping the pasta, arrange the pieces in a single layer on a tray dusted generously with gluten-free flour blend to prevent clumping and sticking while they rest before cooking.
