Split a fresh vanilla pod and scrape out the aromatic seeds, or use a few drops of high-quality vanilla extract. Stir the vanilla into the mixture and gently heat over low flame, carefully monitoring the temperature to reach just below boiling (approximately 85–90°C / 185–194°F). This process creates a rich custard, the foundation of authentic Italian gelato.

Chill, Churn, and Prepare the Strawberries

Remove the custard base from the heat and immediately incorporate the cold heavy cream, whisking until fully combined and silky. Transfer the mixture to the refrigerator and chill for at least one hour to develop flavor and texture.

Once chilled, pour the base into your ice cream maker and churn according to the manufacturer’s instructions—within about 30 minutes, you’ll achieve a beautifully creamy gelato. While the gelato churns, rinse the fresh strawberries, hull them, and slice into wedges. Toss the strawberries with a sprinkle of sugar in a bowl, then add a splash of aged balsamic vinegar. Allow them to macerate, releasing their juices and forming a glossy, aromatic syrup.
