  • Instant yeast 8 grams

Mix and Knead the Dough

Begin by dissolving active dry yeast in a small amount of lukewarm water. In a large mixing bowl, combine your chosen flour with the yeast mixture. Stir in sugar, olive oil, and finally salt—add the salt last to prevent it from inhibiting the yeast's action. Next, blend in the pumpkin purée until all ingredients are well incorporated. As the dough starts to come together, transfer it to a wooden board and knead until it becomes smooth and elastic. Place the dough in a greased bowl, cover with plastic wrap, and allow it to rise in a warm, draft-free spot (such as an oven that's been gently warmed and then switched off) for approximately 2 hours, or until doubled in size.

Shape and Bake the Loaf

Lightly grease and dust a loaf pan with flour, then gently shape the risen dough and place it inside. Preheat your oven to 200°F (90°C). For a softer crust and a beautiful rise, set an oven-safe dish half-filled with water on the bottom rack to create steam. Bake your bread in the lower third of the oven for about 45 minutes. If the crust begins to brown too quickly, shield it with a piece of aluminum foil or parchment paper to prevent burning and ensure even baking.

So soft and yummy!

As always, I buy way too much squash when it is season! This was a great way to use some if the vegetable which was going to waste, and the bread is absolutely perfect! So soft and tasty, the sweetness of it pairs perfectly with ham and cheese!
