Step

1

Of 3

Clean and Prep the Shrimp

Begin by thoroughly cleaning your shrimp. Remove the outer shells, ensuring you keep both the heads and tails attached for maximum flavor and an elegant presentation.

Using a wooden toothpick, gently lift out the dark vein running along the back of each shrimp and discard. This step ensures a clean taste and professional finish.

Step

2

Of 3

Create the Ginger-Orange Marinade

Carefully peel your orange, taking care to remove all the bitter white pith with a sharp knife for a sweeter result.

Slice the orange into generous rounds and arrange them in a shallow, high-sided dish suitable for marinating.

Peel the fresh ginger. Depending on your flavor preference, leave it whole for a milder infusion or slice it thinly for a bolder kick.

Add the orange slices, ginger, and a handful of fresh oregano leaves to the dish. Season liberally with sea salt and a drizzle of high-quality extra virgin olive oil.

Toss gently, then nestle the prepared shrimp into the marinade, ensuring full coverage. Allow the mixture to rest in the refrigerator for at least 60 minutes. This step lets the shrimp absorb the vibrant citrus and herbal notes.

Step

3

Of 3

Sauté and Serve the Shrimp

Preheat your oven to 220°C (428°F). Arrange the marinated shrimp in a single layer on a baking sheet or ovenproof dish. Roast for about 4-5 minutes, just until the shrimp are firm, opaque, and fragrant.

Carefully transfer the hot shrimp atop a generous bed of fresh arugula (rocket). Finish with a final sprinkle of sea salt and a delicate drizzle of extra virgin olive oil to enhance freshness and flavor.

Serve immediately and savor the harmony of ginger, orange, and succulent shrimp—a dish that combines tradition and innovation in every bite.
