  • Belgian endive (Heads) 1
  • Extra-virgin olive oil as needed
  • Fresh mixed herbs 0.5 cup
  • Basil (Leaves) 1 cup (bunch)

Craft the Cheese and Herb Base

In a food processor, blend a generous handful of fresh parsley and basil with 3 tablespoons of high-quality extra virgin olive oil and a pinch of sea salt until you achieve a smooth, fragrant cream.

Next, incorporate your chosen selection of fresh herbs—think chives, tarragon, or marjoram—into the mixture and pulse until thoroughly combined. Transfer to a clean bowl for the next step.

Using a large mixing bowl, press ricotta cheese through a fine sieve with the back of a wooden spoon to ensure a silky texture. Stir in grated Parmigiano Reggiano or Grana Padano, a touch of salt and pepper, and the blended herb mixture. Crack in an egg to help bind the ingredients, mixing until everything is smooth and uniform.

Line a loaf tin with dampened parchment paper, then pour in the ricotta and herb mixture, smoothing the surface for even cooking.

Bake, Finish, and Serve

Preheat your oven to 180°C (356°F) and bake the terrine for approximately 50 minutes. You’ll know it’s ready when the top is golden brown and the loaf is firm but springy. Allow the terrine to cool slightly before gently lifting it from the tin.

While the terrine rests, finely shred some endive. In a sauté pan, quickly cook the endive with a drizzle of olive oil for just a few minutes. Season with salt and pepper, and finish with minced garlic, letting the flavors meld. Spoon the sautéed endive and its juices over the top of the terrine, then garnish with more freshly chopped herbs.

Slice and serve your herbed terrine at room temperature for best flavor and texture—a celebration of Italian ingredients in every bite.
